Comfort Food (May): Pancakes

It doesn’t get much better than mixing up some fresh flapjacks for your kid/s on a Saturday morning. When blueberries weren’t in season, Mom would treat us by substituting chocolate chips – made into faces of course. It was always a great pick-me-up.
Here’s my recipe.
2 eggs beaten
1tsp vanilla
1tbsp vegetable oil (or melted butter)
1 tbsp brown sugar
pinch of salt
1 cup milk
1 cup all purpose flour
3 tsp baking powder
chocolate chips (Ghirardelli semi-sweets are especially good)
Mix all ingredients in a large bowl (one with a pouring spout is preferrable) and pour out onto hot griddle to make approx. 4 inch circles. When bubbles appear, add chocolate chips and flip. Cook remaining side until dry in center. Top with whip cream and you can pretend to shave the face with your fork.
